YELLOW PUMPKIN CURRY
Yellow pumpkin is also
called manjal poosanikai or parangikai.this pumpkin is rich in beta carotene , vitamin
A, B6,c and E which helps in the process of improving immune system .it helps
in anti-ageing process and from heart diseases. here are the step by step
pictures to make yellow pumpkin curry which can be side dish to meal. children’s
will eat it without any struggle as it s sweet in taste.

INGREDIENTS
1.
Yellow pumpkin -350gms
2.
Finely sliced onion -half
3.
Green chili - 2
4.
Curry leaves and mustard seeds,urad dal for seasoning
5.
¼ tsp of turmeric powder
6.
½ tsp red chili powder
7.
Water – to needed
8.
Salt - to taste
9.
Oil - for cooking
PREPARATION
o
Take 350gms pf yellow pumpkin , cut off
the out thick skin of pumpkin and inner seeds .
o
Now cut it finely into sliced piece and
put it in bowl containing water.
o
Take half and more of medium sized onion
and cut into finely sliced pieces and also cut green chili into two piece as
shown.
COOK

At
medium flame, a add two tsp of oil and when oil get heated, add Curry leaves, mustard seeds, urad dal .

and then add sliced onion and green chili to it . and salute
till the onion are to be golden in colour
4. Add ¼ tsp
of turmeric powder, ½ tsp red chili powder and salt to it .

Don’t add too much of water to it, just sprinkle some tsp of
water as potato have cooked in the heat. Cover the pan and allow to cook for 10
mins, in-between just flip-flop so that it wont be burnt.
6.
Now check for sliced potatoes to fried crispy and turn off the
flame .
7.
Serve it .
NOTE
If you don't want smashed yellow pumpkin curry then don’t add too much of water .and if you have toddler in your home add little bit water in excess.
